Ingredients
- Splash of oil
- 1 Tbsp butter (use vegan butter)
- 1 onion, diced
- 3 tsp garlic
- 2 tsp ginger
- Sprinkle chilli flakes
- 1½ tsp cumin
- ½ tsp garam masala
- 2 tsp turmeric
- 1 litre vegetable stock
- 3 bay leaves
- Sprinkle cinnamon
- 1½ cups lentils
- Lemon juice, to taste
- Coriander, to taste
- Rice, to serve
Instructions
- Put rice on to cook.
- Heat oil and butter in a pan. Add onion and cook until soft.
- Add garlic and ginger and cook briefly until fragrant.
- Add cumin, garam masala and turmeric. Stir well.
- Add vegetable stock and bring to the boil.
- Add bay leaves and a sprinkle of cinnamon.
- Add lentils and a squeeze of lemon juice.
- Simmer for 15 minutes until lentils are soft.
- Stir through coriander.
- Remove bay leaves and serve with rice.
